Caryophyllene / ˌ k ær i oʊ ˈ f ɪ l iː n /, more formally (−)-β-caryophyllene, is a natural bicyclic sesquiterpene that is a constituent of many essential oils, especially clove oil, the oil from the stems and flowers of Syzygium aromaticum (cloves), the essential oil of Cannabis sativa, rosemary, and hops.
It is usually found as a mixture with isocaryophyllene (the cis double bond Boiling point: – °C (– °F; – K). Terpenes are a group of fragrant essential oils that contribute to the complex aroma and effects of cannabis. Three common terpenes include humulene, caryophyllene, and trans-nerolidol.
Caryophyllene definition is - a liquid sesquiterpene C15H24 obtained from various essential oils (as clove oil) as a mixture of stereoisomers distinguished as α- β- and γ-caryophyllene.
(-)-beta-caryophyllene is a beta-caryophyllene in which the stereocentre adjacent to the exocyclic double bond has S configuration while the remaining stereocentre has R configuration. It is the most commonly occurring form of beta-caryophyllene, occurring in many essential oils, particularly oil of cloves.
It has a role as a non-steroidal anti. IUPAC Standard InChIKey: NPNUFJAVOOONJE-IOMPXFEGSA-N CAS Registry Number: Chemical structure: This structure is also available as a 2d Mol file; Species with the same structure: Bicycloundecene, 4,11,trimethylmethylene-deriv.
Caryophyllidea: The Caryophyllideans are a group of tapeworms that infect fish and annelids (segmented worms) with a simple scolex or "head." Worms in this order only have one proglottid, which is believed to be the primitive condition for tapeworms.
They are generally less than 10 centimetres long. Caryophillideans represent a unique type of Class: Cestoda. β-Caryophyllene has the distinction of being the first known “dietary cannabinoid,” a common component of food that has GRAS (Generally Recognized as Safe) status and is approved by the FDA for food use.
β-Caryophyllene is the primary sesquiterpene contributing to the spiciness of black pepper; it is also a major constituent of cloves. Nurdjannah, N. Bermawie, in Handbook of Herbs and Spices (Second Edition), Volume 1, Clove oil.
Clove oil is a mixture of different compounds, with the three main active ingredients being eugenol, eugenyl acetate and caryophyllene. Jirovetz et al. () found 23 constituents, with eugenol ( %), followed by β-caryophyllene ( %), α-humulene ( %), and eugenyl acetate.

Furthermore, it has been found in the oils of pepper, betel, Ceylon cinnamon. Nurdjannah, N. Bermawie, in Handbook of Herbs and Spices (Second Edition), Volume 1, Clove oil.

Caryophyllene is a chiral molecule. Look up the specific rotation of caryophyllene; then draw its structure and identify any stereocenters by placing an asterisk next to them.
Four new caryophyllene derivatives, Sch (1), Sch (2), Sch (3), and Sch (4), were isolated from the fungal fermentation broth of Chrysosporium pilosum by reversed-phase HPLC purification. The structure elucidation of trioxygenated caryophyllenes 1−4 was accomplished on the basis of spectroscopic data interpretation.
Sch (4). Two new caryophyllene sesquiterpenes have been isolated from Pestalotiopsis sp., an endophytic fungus associated with the bark and leaves of Taxus brevifolia. Pestalotiopsin A (1) has a novel oxatricyclic ring system while pestalotiopsin B (3) exists as two slowly equilibrating atropisomers ( ratio of ββ:βα) in chloroform solution at room temperature.
Biotransformation of caryophyllene by Chaetomium cochliodes DSM (=ATCC ) leads to 4,5-epoxy-caryophyllene-7,diol as the main product. The hydroxylation of the geminal methyl groups is not very stereospecific, but as with Diploida gossypina the main product possesses the -reactions are ring contraction or formation of clovanes.
